Hmmmm, burrata vind ik echt zoooo lekker! Daarom bedacht ik dit heerlijke bruschetta gerecht zodat ik er ook tijdens de lunch kok van genieten. De combinatie van de zachte burrata met de warme tomaatjes is echt hemels. Ga jij het proberen?

Wat heb je nodig voor 2 personen?
-1 stokbrood of ciabatta
-200 gram burrata
-200 gram Griekse yoghurt
-2 eetlepels limoensap
-peper en zout
-30 kerstomaatjes
-2 teentjes knoflook
-2 eetlepels olijfolie
-2 eetlepels pesto rosso
-basilicum
Hoe maak je het?
Doe de kerstomaatjes in een ovenschaal. Kruid met peper en zout en besprenkel met olijfolie. Verdeel er de fijn gehakte knoflook onder. Rooster ze 15 minuten in de oven op 200 graden.
Meng de burrata met de yoghurt en het citroensap, kruid met peper en zout.
Snijd het stokbrood in stukken en doormidden. Bak kort in een beetje olie krokant. Verdeel er dan de burrata en een paar eetlepels pesto over.
Haal de geroosterde tomaatjes uit de oven en verdeel ze ook over de burrata. Werk het brood nog af met peper, zout en basilicum.
